At Fairmont Farm & Market, we're more than just a place to pick up your groceries. We're a family passionate about animals and dedicated to providing our community with the highest quality, locally raised meats. From the pastures to your plate, we take pride in every step of the process. So, what exactly goes into running our market? Let's take a behind-the-scenes look.


The Heart of It: Animal Care and Breed Selection


Our family shares a deep love for animals. It's the foundation of everything we do. Expanding beyond our dairy cows to include beef, pigs, and sheep was a natural progression for us, a way to diversify while doing what we love.


Choosing the right breeds is crucial. We carefully select breeds known for their quality and flavor. All cows at our "Dairy" are bred to beef semen, specifically using a select Angus breed. This ensures we produce a high-quality cut of meat with the perfect balance of tenderness. We're also excited to offer a variety of cuts from our Wagyu Cross breed, which adds a tremendous amount of marbling for exceptional richness and flavor! A selection of these animals are kept and raised for our Market. We offer a wide range of cuts, from classic steaks like ribeye and sirloin to ground beef and roasts.


Our pigs are raised at the "Haven" and are grown with milk from our Matriarch cows, as well as supplemental grain. This unique feeding method contributes to the exceptionally flavorful cuts of pork we offer. We offer everything from pork chops and bratwurst to ground pork and bacon.

We raise Dorset sheep for our Market. Our sheep are raised on pasture during the spring, summer, and fall, and can be found enjoying the mountain view at the "Farm." We offer lamb stew meat, loin chops, and more.


Caring for these animals is our top priority. They graze on our pastures, enjoying a diet that contributes to the exceptional taste of our meat. We believe that happy, healthy animals make for the best products. We are proud that we can provide locally raised meats to our community. These animals are all raised by our family with love, so they can be enjoyed by your family around the dinner table! 


The Process: From Farm to Market


Once our animals reach the appropriate size, we work closely with local, reputable processors. We carefully schedule processing dates to ensure a consistent supply of fresh meat for our customers.


Creating "cut sheets" is a vital part of the process. These sheets detail the specific cuts we want from each animal. This allows us to offer a wide variety of options, from classic steaks and roasts to specialty cuts.


Inventory control is another essential aspect of our operation. We track our inventory to ensure we have the right cuts available for our customers. This involves careful planning and forecasting, taking into account seasonal demand and customer preferences.
