January can be a hard time for many in New England. It is typically the month we see the coldest temperatures of the year and this year isn’t any different. You might find yourself dreaming of warmer weather, beaches and food that would be enjoyed if on a tropical (or warm climate) vacation!
This month our Farm to Table bag included recipes that we thought could help to escape the winter chill, even if just for a meal, that are full of delicious flavors! We wanted to share a couple with you!

Taco Bowl with Mango Salsa
I don’t think I have ever met anyone that didn’t enjoy mango. This is a kid-friendly meal that features our Fairmont Market ground beef and is a dinner that can be pulled together even after a long day at work. And of course, no taco meal is complete without Cabot cheese. This recipe can easily be adapted using what you have or want with additional veggies or toppings.
