Best cooked by braising or stewing, our lamb shanks are delicious. Oven roasting with rosemary and garlic is our favorite way to enjoy these truly special cuts. Elizabeth's Croatian family also slow roasts full lambs. The key is to season well, use lots of butter, and a touch of garlic. While our lamb is very tender and moist, an extra trick is to spritz with beer for added moisture and sweetness.
