Fairmont Sheep on Summer Pastures

If you have driven down Lyle Young Road past our main farm recently, you have likely noticed a scene straight off a Vermont postcard. Our Dorset ewes and lambs have been soaking up the very best of summer in our pasture. 



The Rhythm of Rotational Grazing

Our spring lambs were born back in March and have been out on pasture since May, as soon as the grass was ready for grazing. It has been a fantastic year for grass growth here in East Montpelier, with just the right amount of rain to keep our fields vibrant and nutrient-rich all season long.


To keep both our land and our flock thriving, we practice a careful system of rotational grazing. We move the ewes and lambs to fresh pasture roughly once a week. Sheep are absolute natural landscapers; by rotating them regularly, they chew down the fields evenly, which encourages healthy root systems, supports soil health, and keeps our pastures looking beautifully green and well-managed week after week.


From Pasture to Plate: Fine Dining Partnerships

In August, we will be processing around 20 of our pasture-raised lambs. A significant portion of this high-quality lamb is headed directly to some truly special culinary partners who share our passion for local, sustainably raised food. We are honored to supply Twin Farms in Barnard, VT, as well as Talulla in Cambridge, MA, bringing farm-fresh Vermont lamb straight to their exceptional menus.


We still have a limited selection of lambs available for purchase, either live or processed. We are also eager to connect with additional local chefs and restaurants looking to add premium, pasture-raised Dorset lamb to their upcoming seasonal menus. To celebrate the season, we are sharing one of our absolute favorite farm kitchen recipes this week: homemade Lamb Meatballs made with our rich, flavor-packed Fairmont ground lamb! Ground lamb brings a subtle, tender richness to classic meatballs that pairs beautifully with fresh summer herbs and a side of crusty local bread.
